Creamy, sweet, decadent and full of healthy, nourishing ingredients, this is a guilty pleasure that won’t leave you guilt ridden. These treats are full of easily digested, brain-boosting medium triglyceride fat, rich in lauric acid which provides anti-fungal, anti-bacterial and anti-viral properties, and loaded with anti-oxidants, manganese, zinc, iron, calcium and potassium, vitamins A, K, B12, as well as Biotin and Choline. What you need:
- Mixer and bowl
- 1 cup coconut butter
- ¼ cup raw cocoa powder
- ¼ cup shredded coconut
- 2.5 TB maple syrup
- 2 TB butter (or ghee*, if you have dairy allergies)
- 1 egg
- 1 tsp vanilla extract
- 1 pinch salt
Instructions:
Soften the coconut butter by gently heating for 30 seconds in the microwave. Mix all ingredients together until well blended. Place mixture in refrigerator 5 minutes, until slightly firm but pliable. Spoon out sections 2 tablespoons at a time, roll into balls and return to refrigerator for at least 10 additional minutes, until truffles are firm. Dig in and smile! I dare you to eat just one.
